This mango coconut ice cream is the perfect treat for a hot summer day! It's easy to make with a few simple ingredients. An easy, delicious, vegan dessert!
In a sauce pan heat the coconut milk, sugar and salt until sugar is dissolved. Slice or dice the mango and add to the coconut milk mixture. Pour into a baggie and place in the freezer overnight or until frozen. Once the mixture is frozen, remove from the baggie and process in a food processor. Serve and Enjoy!

You will need a food processor for this recipe.
If you prefer yours sweeter you can always add more sugar.
