This mango coconut ice-cream is a scrumptious delight, that’s vegan too! It’s super easy to make with just a few simple ingredients. Sure to please everyone!

You will love this recipe because it is so so good and on top of that it’s incredibly quick & easy! There are only 3 ingredients too! Well, 4 if you count salt.
What you will need:
- Mangos (I like to use yellow mangos, also called alphonso mangos usually found in an asian grocery store. I also have found them in Costco. I prefer the yellow ones over the green kind as they are sweeter, smooth and less stringy.)
- Coconut Milk (I like to use Taste of Thai Brand Coconut Milk now, because it only has coconut milk, water, and guar gum.)
- Sugar
- Salt
I actually came up with this recipe on accident, after making mango sticky rice for a women’s tea party at work. We had a bunch of left over sauce and mango pieces and I was in a hurry to put stuff away so that I could go home.
I combined them in a baggie, tossed it in the freezer, and the next thing you know, we were enjoying the yummiest, low sugar, non-dairy ice cream ever!
Tips:
You can use a silicone ice cube tray to freeze it in also. The smaller frozen chunks would be easier to blend in the food processor.

Equipment
- 1 Food Processor
Ingredients
- 1 can Coconut Milk
- 2/3 cup Sugar
- 1/2 tsp salt
- 4 Mangos peeled and seed removed
Instructions
- In a sauce pan heat the coconut milk, sugar and salt until sugar is dissolved. Slice or dice the mango and add to the coconut milk mixture. Pour into a baggie and place in the freezer overnight or until frozen. Once the mixture is frozen, remove from the baggie and process in a food processor. Serve and Enjoy!
Notes
- You will need a food processor for this recipe.
- If you prefer yours sweeter you can always add more sugar.
- This makes great popsicles too!
